Leftover grated carrots make for an excellent sandwich filling however it does make for a lovely sandwich too; when adding slices of cucumber and slathering the bread with hummus. A refreshingly light lunchtime meal that absolutely satisfies and meets your veggie needs. - JD

Food Photo of the Day ~ Fried Egg Sandwich
When I want something that has substance however modest; I keep it simple with an easy no frills fried egg sandwich. A handful of mixed greens and sprouts nestle the egg and a heavy scattering of back pepper with a light touch of no salt margarine keeps this sandwich focused. I know I made a compromise with the white bread, sometimes it is a must, although brown or seeded breads are my preference. Regardless, this sandwich hits the spot and keeps me going until dinner.
Hope everyone had a lovely weekend! - JD

Food Photo of the Day ~ ELT (Egg, Lettuce and Tomato)
Instead of a BLT, bacon lettuce and tomato, why not an egg, lettuce and tomato. What makes this ELT more complete is the addition of grilled halloumi cheese. This is the best sandwich one can make and devour!
Hope everyone had a nice weekend. - JD

My Week In Food
This is my version of the Coronation Chicken salad. Nothing can get better unless you can add a bit of curry to it. Fresh red peepers and celery. Diced chicken. A handful of crushed almonds. Some mayonnaise and curry powder. Keeping calm and caring on never tasted so good.
Getting back to basics with this spinach Greek salad. Colourful and fresh all settled with a savoury dressing.
I made a pot of tangy barbeque sauce...
That was poured over chicken drumsticks and baked in the oven.
A trip to the farmers market earlier this week had me bringing home all sorts of fresh and tasty goodies. This red lentil pate is one of them. Delicious with crackers and pita bread. It can also be used as a sandwich spread.

I did say curry earlier and I am saying it again. I found this spice mix at the grocery store, Save On Foods. Just add the chicken, tomatoes, and cream. Making curry from scratch just got easier. I found the chicken curry to be spicier than others however I feel it is more of a true chicken curry. I highly recommend this spice brand.
And finally... I used the Camp coffee in baking and last night I decided to make a coffee with it. Very easy to make add about 8 ounces of hot milk to 1 1/2 teaspoons of Camp coffee. As the milk was heating I used a whisked to give it a bit of froth. It had a lovely mild caramel flavour. I have also been told that you can make it with hot water and then add the milk.
Hope everyone has a good weekend! - JW

My Week In Food
This may be a new series of posts I do called My Week In Food. It will be more of a snapshot... a summary... the highlights of what I cooked or baked in a week. Most often than not I do not post everything I create and that goes for my other blog as well, unfortunately. Some weeks are busier inside and outside of the kitchen. My kidlets complain that I take to many photos of the things I cook or bake. I must admit that is true. I take plenty of photos only to narrow it down to one then the rest get deleted. I am a slave to my creations.
These pancakes started off the Canada Day long weekend. They came with all the trimmings... and by that I mean maple syrup!
Visiting the farmer's market and spending sometime at the Legislature grounds had me making this fast summertime snack, nachos. Or as I like to call them my Canada Day nachos due to the fact I used red and white corn chips.
I luv salads! Trying new ingredients to make salads fresh and tasty are a must. Pea sprouts are my salads new best friend!
An egg salad sandwich on marble rye was not immune to pea sprouts. They spruced up this otherwise bland sandwich. A lunchtime favourite of mine that is best with watercress.
A glass of milk is all you need... my late night baking took a break from banana bread. I made chocolate chip cookies instead.
What to do with that last little bit of mozzarella cheese... make another salad. There are chopped tomatoes, red peppers, cucumbers, red onions, raspberries, pea sprouts and cubes of mozzarella cheese. All tossed in a homemade raspberry vinaigrette dressing.

Chicken Apple Salad Sandwich
On the weekend I made this sandwich. I know I have featured before. It was so yummy I just had to feature it again. I chopped up left over roasted chicken, one apple, I used a gala apple but feel free to add any apple that you like. Core and cut the apple into pieces with the skin on. I then added a tablespoon of mayonnaise and a couple of squirts of salad cream. Some freshly ground pepper, a pinch of salt and freshly dried parsley. You can also add bacon. I didn't have any bacon on hand so I used some soy bacon bits I found in the pantry. It added these little tasty crunchy nuggets. Walnuts and dried cranberries can be added as well.
This is how I served my sandwich on rye bread with a low sodium garlic pickle! - JW

Veggie Hummus Roll
I know when the weather gets cold we all tend to reach for the stodgy comfort food. This is my comfort food, a veggie hummus roll.
First I added a generous amount of hummus to the bottom portion of the roll. Then I added a heap of lettuce, slices of orange peppers, thinly sliced old cheddar cheese, a full circle of red onion, a juicy tomato, a handful of hand picked parsley and a dollop hot English mustard. It's like a burger without the meat or meatless patty. Full on veg! Filled with protein and lovely veggies this hit the spot after a long walk. - JW

Grilled Tomato and Blue Cheese Sandwich
Ever feel like the old tried and true sandwiches need a bit of a pick me up? This is what I had for lunch today. It is quickly becoming my favourite sandwich. Make a grilled cheese sandwich as you normal do however replace the cheddar cheese with crumbled blue cheese.
Placed the crumbled blue cheese on one side of the bread, buttered side down. Then place the tomatoes, 2-3 slices, on top of the blue cheese then place a bit more blue cheese on top of the tomatoes. Then place another slice of bread on top, buttered side up. Flipping the sandwich to make sure both sides get golden brown and cheese is melted. Adding a touch of mustard would give this sandwich some more punch. - JW

Beat the Heat #3
Trying to stay as cool as a cucumber? What better way than with cucumber sandwiches. Take bread slices, white or brown, and smoother half of them in light cream cheese. Then take one lemon and grate over the slices with the cream cheese. Place slices of cucumber over the lemon rind and cream cheese. Add a top slice of bread. Now use a knife to cut into squares, triangles or fingers. Regardless of being Royal or not cut the crusts or ends off. It's your preference. Even more fun is to use cookie cutters to create delicate shapes. You can make these sandwiches and keep them refrigerated until you are ready to serve. Cucumber sandwiches are fresh and hit the spot when trying to keep things cool and light. - JW

Euro 2012
Monday I went to the Italian Centre to do some regular shopping and thought I would stop and have a bite to eat. Their sandwiches and lattés are fantastic and their bakery is to die for! Unknowingly when I sat down at my table all three t.v. screens in the small café were blaring the EUFA Euro 2012, England vs. France game. The place was busy and packed! I was just able to watch the few remaining moments of the game where it ended in a tie, 1-1. Not bad... and the sandwich and latté went down nicely as well! - JW

Chicken Salad Sandwich

Looking for an idea for lunch? How about my Chicken Salad sandwich. Chop up left over roasted chicken into bits. Chop a bit of celery and red onion. Add those three ingredients to a bowl. Add some mayonnaise and a bit of salad cream. Season with paprika, I added paprika with lemon and lime. You can season with salt and pepper, hot sauce, mustard... your options are pretty much endless. The same with your veg. Add whatever you like. Mix all together in a bowl. Getting all the flavours happy with one another. Then turn out the mixture onto slices of rye bread. Top with another slice of bread. Cut in half and there you go. One tasty sandwich! If it's cold outside, like it is today, try it grilled. Enjoy! - JW

Egg Salad

I don't know about you but I peel my eggs while they are still hot. I find that every time I let them cool down the eggs do not separate from the shells so graciously. After the eggs have finished boiling, drain the water and then put them back in the empty pot and run cold water over them. Let them sit for a matter of seconds. Smack and roll the boiled egg on a flat surface, an instant tension releaser. All the while listening to the crack and crunch of the shell. Then peel away the shell. With the eggs still being hot your fingers get a bit of a workout. Repeat until all of the egg have their shells removed. With all the shells gone rinse the eggs under cold water and and place in a bowl. With a fork start mashing...
After mashing the eggs add a pinch of salt, pepper, green onion, a tablespoon of mayonnaise and a tablespoon of English salad cream. I absolutely luv salad cream and use it whenever I can. It adds a bit of tanginess and sweetness to your dish. To give a bit of heat or kick to your egg salad add hot sauce or my favourite Dijon mustard.
And when you are done you can dress it however you wish. Lettuce gives more crunch!

My Afternoon Warm Up!

While I was out braving the minus 27 degree weather, the thing I kept thinking about was a grilled cheese sandwich. As soon as I got home and put the shopping away I smacked together two pieces of rye bread, cheddar cheese and salami. Very satisfying. This was more than Dylan Moran's melted imaginary cheese thing... it was real and warm! - jw
