Food Photo of the Day ~ Pancakes!

Seems like we just can't get enough of pancakes and even more so on Canada Day! What is that saying... Pile them high and watch them fly. Very true with a fluffy stack like this. Maple syrup with a light pat of butter is spot on. A great way to start the day.

Happy Canada Day and stay safe everyone! - JD

Food Photo of the Day ~ Blueberry Pancakes and Pizza

A nearly perfect Canada Day... unfortunately it rained for most of it however celebrations throughout E-town were not dampened by the wet weather. We started out the morning with these fluffy blueberry pancakes with maple syrup.

And... we ended our day...

... with a homemade Canadian pizza loaded with Canadian bacon, spicy salami, peppers, field mushrooms, barbeque sauce, olives and Canadian Cheddar, of course!

Hope everyone who celebrated Canada Day had a nice one, like us! - JD

Oven Baked Bannock

Bannock may be pan-fried or roasted over an open fire and also oven baked. This weekend I made this oven baked Indigenous recipe that was delicious.

Bannock
----------------------------------------------------------------------
3 cups of all purpose flour
1 teaspoon salt
2 tablespoons baking powder
1/4 cup melted butter*
1 1/2 cups water

* Traditionally bannock is made with animal lard or shortening

Preheat oven to 350ºF (175ºC)

Measure flour, salt, and baking powder into a large bowl. Stir or whisk together. Create a well in the centre of the flour mixture and pour the melted butter and water into the well. Using a fork stir the flour mixture into the wet ingredients until all is combined and a sticky dough has formed.

Place dough on a lightly floured surface and gently knead 10 times. Break off pieces and forming into rounds about 1 inch thick.

Bake on a greased or lined baking sheet in the the preheated oven for 25 to 30 minutes. Or if you prefer cook bannock in a greased frypan; over medium heat allowing 15 minutes for each side.

Notes: The dough may be formed and placed in a greased loaf pan and baked until golden brown on top. Then broken in to pieces. I used baking parchment paper to line the baking sheet I was using to bake the bannock.

Hope everyone had a great weekend! - JD

Canada Day Delights

Canada Day is this weekend and celebrating 150 years is a monumental one; and in the culinary or grocery departments we seemed to have been inundated with all things Canadian...

Maple Marshmallows... these can be used to make rice krispie treats and most importantly as we decided, S'mores! Yes, I will be making s'mores using maple marshmallows.

Firework Oreo's... although these seem more geared towards the American's, 4th of July, they were released before July 1st, here, so we'll take that as a sign of celebrating July 1st.

Maple Birthday Cookies... maple cream cookies are traditionally oh so Canadian however these birthday cookies are a red maple shaped biscuit with a cream cheese filling honouring the colours of the Canadian flag.

The 150th to go coffee cup celebrating Canada's 150th year. These cups have been featured off and on during the months at Second Cup. At the time of this photo I was enjoying a lovely maple latté. Surprise!

Merchandise... whether it's mugs, pins, shirts, or hats seems like showing your Canadian pride goes further and ventures into home decor. Home decor with cheeky Canadian humour.

Beaver cookies... a sweet treat to enjoy. Even better with a maple latté.

Maple frozen Greek yogurt bars... seems like nothing can escape maple not even frozen yogurt.

Maple & Bacon Popcorn... although this was on shelves well before Canada Day it is a flavour that can be enjoyed anytime and even if you are not Canadian.

Hope everyone is having a good week so far. - JD

My Week In Food

This may be a new series of posts I do called My Week In Food. It will be more of a snapshot... a summary... the highlights of what I cooked or baked in a week. Most often than not I do not post everything I create and that goes for my other blog as well, unfortunately. Some weeks are busier inside and outside of the kitchen. My kidlets complain that I take to many photos of the things I cook or bake. I must admit that is true. I take plenty of photos only to narrow it down to one then the rest get deleted. I am a slave to my creations.

These pancakes started off the Canada Day long weekend. They came with all the trimmings... and by that I mean maple syrup!

Visiting the farmer's market and spending sometime at the Legislature grounds had me making this fast summertime snack, nachos. Or as I like to call them my Canada Day nachos due to the fact I used red and white corn chips.

I luv salads! Trying new ingredients to make salads fresh and tasty are a must. Pea sprouts are my salads new best friend!

An egg salad sandwich on marble rye was not immune to pea sprouts. They spruced up this otherwise bland sandwich. A lunchtime favourite of mine that is best with watercress.

A glass of milk is all you need... my late night baking took a break from banana bread. I made chocolate chip cookies instead.

What to do with that last little bit of mozzarella cheese... make another salad. There are chopped tomatoes, red peppers, cucumbers, red onions, raspberries, pea sprouts and cubes of mozzarella cheese. All tossed in a homemade raspberry vinaigrette dressing.
