Food Photo of the Day ~ Korean Bibimbap

My son created this dinner for us, it's one of his favourite meals, Korean Bibimbap and it was so delicious. I have enjoyed Bibimbap many times however his efforts were extremely tasty. It was nice of him to make dinner for us. I was able to have the evening off, so to speak, from the kitchen and relax although I did offer a helping hand to keep the kitchen running smoothly.

Three Bean Salad

With some creativity and a little culinary know how creating meals using canned food may be a necessity or a regularity at times. As a main, side or on toast this is a healthy and delicious way to add some extra fibre to your meals.

Three Bean Salad
------------------------------------------------------------

1 can of chickpeas, drained
1 can of red beans, drained
1 can of black beans, drained
half red onion, diced
half green pepper, diced
mixed green sprouts, optional

Dressing:

1/2 cup olive oil
1/2 cup apple cider vinegar
2 tablespoons white sugar
1/2 teaspoon salt
freshly ground black pepper
1 teaspoon summer savoury

In a bowl whisk all the dressing ingredients together until the white sugar has dissolved.

Make the dressing and set it aside.

In a large bowl add the drained chickpeas, red beans and black beans. Then add the diced red onion, green peppers and mixed sprouts, if using. Whisk the prepared dressing and drizzle the dressing over the beans and vegetables, you might not need to use all of the dressing; depends on taste, gently toss to coat. Refrigerate for a few hours to allow all the ingredients and flavours blend together.

Leftovers #47 ~ Cornish Hen Hot Open

Holiday time can mean having plenty of leftovers and that means pulling an assortment of things to make a meal. This hot open sandwich was a great way to use those Christmas leftovers into a hearty meal with all the trimmings during the festive week.

Hope everyone had a great weekend! - JD

Food Photo of the Day ~ Fried Egg Sandwich

When I want something that has substance however modest; I keep it simple with an easy no frills fried egg sandwich. A handful of mixed greens and sprouts nestle the egg and a heavy scattering of back pepper with a light touch of no salt margarine keeps this sandwich focused. I know I made a compromise with the white bread, sometimes it is a must, although brown or seeded breads are my preference. Regardless, this sandwich hits the spot and keeps me going until dinner.

Hope everyone had a lovely weekend! - JD
