Food Photo of the Day ~ Nachos

You can never have too many nachos during the warmer months as they make for a casual and relaxed dinner, if you mind the elbows. Loaded with seasoned beef and bean crumble, fresh diced tomatoes, chopped green onions, slices of black olives, fresh peppers from our garden, loads of cheese and doused with red taco sauce; these were served with sour cream, guacamole, and a tangy spicy salsa. Minimal effort, just some leisurely chopping, dicing and shredding, with a maximum piquant flavour making this one of our most inviting dinners to share.

New Year's Eve 2022 & New Year's Day 2023

New Year's Eve was casual and festive and what better way to send off the last day of the year than with a massive platter of nachos. Layers of corn chips, cheese, refried beans, peppers, hot peppers, olives and tomatoes were nibbled and noshed and dipped in guacamole, salsa and sour cream by all with such celebratory flair. Followed later with champagne and nibbles. It was a perfect way to say goodbye to 2022!

New Year's Day was sunny and bright, which is a positive way to start the New Year. Our dinner was less formal... or traditional however it did have some holiday signatures such as glazed ham and stuffing along with a jasmine wild rice trio and peas. A more robust happy go lucky plate to welcome 2023.

Food Photo of the Day ~ Nachos

At the best of times dinners are meant to refuel and sustain you until the next day and other times dinners can be relaxed and loaded with a variety of ingredients. Fresh vegetables, seasoned minced meat, shredded cheese and organic corn chips accompanied by salsa, sour cream and guacamole;  nachos are quick and perfect for sharing and make for an engaging meal time.  - JD

Food Photo of the Day ~ Nachos

The cold weather has struck again so a round of epic nachos were in order. Crispy bacon, refried beans, corn, black beans, freshly diced tomatoes, and of course, melted sharp cheddar cheese. Topped with chopped lettuce and sprinkled with a chili pepper and lime seasoning salt. These were happily served... and devoured with salsa, sour cream, and a homemade guacamole dip. Perfect for sharing!

Hope everyone had a great weekend! - JD

Holiday Nachos and Boxing Day Pizza

Having a bit of fun this Christmas I made these holiday nachos to keep the hungry masses at bay. I used whatever veggies I had on hand and did a mix of red and yellow corn chips. Placed shredded lettuce on top for a bit of crunch and colour.

Not everyone, including myself, managed well with the Cornish Hens therefore there were leftovers. So I served up a pizza with brown mushrooms, black olives, red onion, green peppers, feta and mozzarella cheese, and some of the leftover Cornish hen meat. Unique, festive, and slightly gamey however very tasty.

The temperature has dropped dramatically so a perfect day to potter around the house. - JW

My Week In Food

This may be a new series of posts I do called My Week In Food. It will be more of a snapshot... a summary... the highlights of what I cooked or baked in a week. Most often than not I do not post everything I create and that goes for my other blog as well, unfortunately. Some weeks are busier inside and outside of the kitchen. My kidlets complain that I take to many photos of the things I cook or bake. I must admit that is true. I take plenty of photos only to narrow it down to one then the rest get deleted. I am a slave to my creations.

These pancakes started off the Canada Day long weekend. They came with all the trimmings... and by that I mean maple syrup!

Visiting the farmer's market and spending sometime at the Legislature grounds had me making this fast summertime snack, nachos. Or as I like to call them my Canada Day nachos due to the fact I used red and white corn chips.

I luv salads! Trying new ingredients to make salads fresh and tasty are a must. Pea sprouts are my salads new best friend!

An egg salad sandwich on marble rye was not immune to pea sprouts. They spruced up this otherwise bland sandwich. A lunchtime favourite of mine that is best with watercress.

A glass of milk is all you need... my late night baking took a break from banana bread. I made chocolate chip cookies instead.

What to do with that last little bit of mozzarella cheese... make another salad. There are chopped tomatoes, red peppers, cucumbers, red onions, raspberries, pea sprouts and cubes of mozzarella cheese. All tossed in a homemade raspberry vinaigrette dressing.
