Chocolate Irish Whiskey Mousse Tart

 

A rich tart that should be served after a light meal or alone with a strong cup of coffee. The touch of whiskey adds a mellow flavour suitable for this indulgent dessert and the toasted hazelnuts and dark chocolate sprinkled casually on top compliment effortlessly. Although the recipe does call for the use of a ready-made shortcrust; I was inclined to make my own and you may feel that way too.         


Chocolate Irish Whiskey Mousse Tart

serves 8 to 10

250g/90z ready-made sweet shortcrust pastry

400ml/14 fl oz double cream

140g/5oz plain dark chocolate, roughly chopped

2 tablespoons Irish whiskey

2 tablespoons icing sugar

chopped roasted hazelnuts for decorating, optional

chopped dark chocolate for decorating, optional


Preheat the oven to 200ºC/400ºF/ Gas mark 6. Grease a 9 inch/23-cm round tart tin.

Roll out the pastry on a work surface lightly dusted with flour to a round 5 cm/2 inches larger than the diameter of the tin. Line the tin with the now formed pastry. Prick with a fork, line with baking parchment paper and fill with beans, then bake in the preheated oven for 10 minutes. Remove the paper and beans and bake for a further 2 minutes, then leave to cool in the tin.

Meanwhile, put 175 ml/6 fl oz of the cream in a saucepan and bring to a simmer over a low heat. Remove from the heat and add the chopped chocolate, stirring until melted and combined. Leave to cool to room temperature, then stir in the whiskey.

Whip the remaining cream with the icing sugar until stiff peaks form. Gently fold in the chocolate mixture until combined.

Pour the chocolate filling into the pastry case and chill for 1 hour 30 minutes, or until set. Serve chilled topped with chopped hazelnuts. It will keep in the refrigerator for up to 2 days.

Up to Date

Surprisingly sweet, this refreshing subtle cocktail is one that should not be missed.


Up - to - Date

makes 1 cocktail

1 oz Whiskey 
1 oz Sherry
3 dashes Bitters
2 dashes Triple Sec

Stir all ingredients together and well with ice in a cocktail pitcher. Strain into cocktail glass.

Master of the Hounds


This strong cocktail has a unique cherry citrus blend worthy of a winter warmer.  


Master of the Hounds

makes 2 cocktails

2 oz Whiskey
1 oz Cherry Brandy
4 dashes of Bitters

Place ice into a cocktail mixing glass. Add all the ingredients and stir. Strain into cocktail glasses.

The Irish Cocktail

The Irish cocktail is smooth with a long, strong finish with many ingredients at play. This would be a lovely pre-dinner cocktail or an evening cocktail where one is quite affable.  

Irish Cocktail

makes 1 cocktail

2 oz Irish whiskey
1/4 oz Absinthe
1/4 oz Triple Sec
1 bar spoon Luxardo maraschino
1 dash Angostura bitters
Lemon twist for garnish
Olive for garnish

Add the Irish whiskey, absinthe, triple sec, maraschino and Angostura bitter to a mixing glass. Fill with ice and stir until well chilled, about 20 seconds.

Strain into a chilled cocktail glass. Garnish with a lemon twist and or olive.

Bittersweet



Surprisingly fruity with a unique blend of sweet smokiness. Very sipable! 


Bittersweet

makes 2 cocktails

2 oz Whisky
juice of 2 oranges
1/2 teaspoon fine caster sugar
2 dashes of Bitters

Place all the ingredients into a cocktail shaker with ice. Shake and strain into cocktail glasses.

Opening

This was an interesting cocktail. Fruity and smoky with just a hint of sweetness.

1 oz Sweet Vermouth
1/2 oz Grenadine

Stir with ice and strain into a cocktail glass.

Blackthorn Cocktail



We have made a Blackthorn cocktail before, with Scottish whisky and sweet vermouth. This version is a more drier cocktail that packs a punch.  


Blackthorn Cocktail

1 ounce Irish Whiskey
1 ounce dry Vermouth
3 dashes Pernod
3 dashes Angostura Bitters

Stir with ice and strain into cocktail glasses.

Klondike Cooler



A rainy Friday usually leads to sunny weekend; and if it is sunny then why not try, the Klondike Cooler. My husband feels this should be called the Klondike Kiss. Regardless, if you agree with him or not this will keep you cool and refreshed. 


Klondike Cooler
------------------------------------

1oz of whisky
juice of 1 orange 
rind of 1 orange, formed into long twirling strips
ginger ale

Place ice cubes and twirling strips of orange rind into a highball glass. Add orange juice and whisky. Stir. Fill with ginger ale.
