Gin and Pink Grapefruit Tonic Cake

 


You don't have to be a King or Queen... or royalty to revel with a slice of this fragrant jubilant cake. However, if you are celebrating the coronation of King Charles III; this is an exceptionally bubbly luscious nod to not only toast such a regal occasion, but for any special occasion you wish.   


Gin and Pink Grapefruit Tonic Cake

200 g (7 oz) unsalted butter, softened, plus extra to grease
200 g (7oz) caster sugar
4 medium eggs, beaten
few drops of pink or red food colouring

200g (7 oz) self raising flour
1/2 teaspoon baking powder
finely grated zest of 1 pink grapefruit
75ml (3 fl. oz) gin



FOR THE SYRUP:

75g (3 oz) caster sugar
75ml (3 fl. oz) pink grapefruit tonic water, such as Fentimens Pink Tonic Water
3 tablespoons gin


FOR THE DRIZZLE ICING:

100g (3 1/2 oz) icing sugar, sifted
1 and 1/2 tablespoons freshly squeezed grapefruit juice


DIRECTIONS:

1. Preheat oven to 350ºF (180ºC, 160ºC Fan, Gas Mark 4). Grease and line base and sides of a 900g (2 lbs) loaf tin with baking parchment. making sure that the parchment comes up about 4 cm (1 1/2 inch) higher than th sides of the tin.

2. In a large bowl beat butter and sugar with a handheld electric whisk until light and fluffy, about 3 minutes. Gradually add the eggs, beating well, after each addition. Use a cocktail stick to add a very small amount of food colouring to the batter, to tinge it a pale pink, repeat if necessary until you get the desired shade. 

3. Fold in the flour, baking powder and grapefruit zest (reserve remaining grapefruit for later), followed by the gin. Spoon onto the prepared tin and bake for 55 minutes to 1 hour or until a skewer inserted into the centre comes out clean.

4. Meanwhile make the sugar syrup. Half the grapefruit and squeeze the juice from one half only. Gently heat the caster sugar and tonic water in a small pan, stirring often, until the sugar dissolves. Turn up the heat and boil for 1 minute. Remove from the heat and mix in the gin and 1 tablespoon of grapefruit. 

5. When the loaf comes out of the oven, poke holes all over the top with a skewer and slowly drizzle over half the gin syrup mixture. Leave to soak on for 10 minutes, then drizzle with the remaining syrup. Leave to cool in the tin on a wire rack.

6. Cut the remaining half of the grapefruit in half again. Then slice a couple of thin half moons from one of the halves. Lay the slices flat on a board, cut along the segments lines into small triangle shapes. Put the triangles on a kitchen paper to dry.

7. Gently remove the cake from the tin, peel off the parchment and place back on the wire rack. Mix the icing sugar with enough grapefruit juice, about 1 and 1/2 tablespoons, to make a slight thick but pourable icing. Spoon icing over the cake and decorate with the grapefruit triangles.

The Garnet


Surprisingly strong but smooth with a refreshing citrus twist. A nice cocktail to relax and chill on an August summer evening.  

The Garnet

makes 1 cocktail

1 1/2 oz Gin
3/4 oz Cointreau
1 oz pomegranate juice
1 oz freshly squeezed grapefruit juice
orange peel, for garnish

Combine the Gin, Cointreau, pomegranate juice and grapefruit juice in a mixing glass with ice and shake well. Strain into a chilled cocktail glass and garnish with an orange peel, if you wish.

The Old Flame Cocktail


This citrusy cocktail is bittersweet and tart. 


Old Flame

makes 1 cocktail

1 oz Gin
1/2 oz Sweet Vermouth
1/2 oz Cointreau
1/4 oz Campari
1 1/2 oz freshly squeezed orange juice
orange peel for garnish

Combine the gin, vermouth, Cointreau, Campari and orange juice in a cocktail shaker with ice and shake well. Strain into a chilled cocktail glass and garnish with orange peel.

The Stork Club Cocktail


It has been awhile since posting about a cocktail and all within good reason. It is nice to leisurely sip on one as opposed to downing one. I have shared plenty of cocktails and I am unsure if these will return into what did become a regular Friday spot.  

This classic cocktail is named after New York City's famed, Stork Club, which was in existence from 1929 until 1965 and apparently it was the place to be! This cool citrus cocktail is uplifting.  

The Stork Club Cocktail

 makes 1 cocktail

1 1/2 oz gin
3/4 oz Cointreau
1 oz freshly squeezed orange juice
1/2 oz freshly squeezed lime juice
dash of Angostura bitters
orange peel for garnish, if you wish

Combine the gin, Cointreau, orange juice and lime juice, and bitters in a cocktail shaker with ice and shake well. Strain into a chilled cocktail glass and garnish with orange peel.

Spring Feeling Cocktail



Cabin fever... Spring fever, call it what you will, this fresh spritely cocktail will certainly give you those Spring vibes.

1/2 oz lemon juice
1/2 oz Green Chartreuse
1 oz Dry Gin

Place all ingredients into a cocktail shaker with cracked ice. Shake well. Strain into 3 oz cocktail glass.

Devil's Cocktail

A surprising hint of sweetness to entice you and with all the smooth and warmth of a classic crisp cocktail this one is moreish however it may creep up on you.

1/2 teaspoon lemon juice
1 1/4 oz Port Wine
1 1/4 oz French Vermouth

Place all the ingredients into a cocktail pitcher with cracked ice. Stir well and strain into 3oz. cocktail glass.

Deep Sea Cocktail

This strong but smooth cocktail has an icy sweetness that is a bit bracing like winter weather.

1 oz French Vermouth
1/4 teaspoon Absinthe or Absinthe substitute
1 dash Orange Bitters
1oz Dry Gin

Place all the ingredients into a cocktail shaker with cracked ice and shake well. Strain into a 3 oz cocktail glass.

Crimson Cocktail


A vibrant and refreshingly sweet but dry cocktail. 

Crimson Cocktail

makes 1 cocktail

1 1/2 oz Dry Gin
2 teaspoons lemon juice
1 teaspoon Grenadine
Port Wine, for topping up
cherry, for garnish

Place all ingredients into cocktail shaker with cracked ice and shake well. Strain into 3 oz cocktail glass, leaving enough room on top to float 3/4 oz Port Wine. Garnish with a cherry, if you wish.

Dry Martini with a Martini Berry


A classic, shaken or stirred, with a martini berry twist! 


Dry Martini

makes 1 cocktail

1 1/2 oz Gin
1/3 oz Dry Vermouth
1 martini berry
ice cubes

Fill a cocktail shaker with ice cubes. Add the gin and dry vermouth. Shake and strain into a cocktail glass. Garnish with a martini berry.


These intriguing martini berries from Fortnum & Mason are a nice way to change up a cocktail. They taste like an olive however have tiny edible seeds inside that have a mild crunch. So glad we ordered these in our yearly Fortnum & Mason order.

Green-Eyed Monster

If you are looking for a different cocktail and one that is Halloween inspired you may want to try this. It is slightly sweet with herbal undertones all thanks to the Chartreuse.

1 oz Green Chartreuse
1 oz Gin
1 oz Sweet Vermouth
Ice cubes

Fill a cocktail mixing pitcher with ice cubes. Add all the ingredients. Stir and strain into cocktail glass.

Savoy Hotel Special Cocktail No.1


Another cocktail similar to the classic cocktail, simple, dry and smooth.

makes 1 cocktail

2 oz Gin
1 oz Dry Vermouth
2 dashes Grenadine
1 dash Absinthe
1 twist lemon zest

Fill a mixing glass with ice cubes. Add all the ingredients, except the lemon zest, into the mixing glass. Stir and strain into a cocktail glass. Garnish with a twist of lemon, if you wish.

Bich's Special


This vintage tipple is smooth and comes with a bit of a orangey bite. A lovely cocktail that is very drinkable.

2 oz dry Gin
1 oz Lillet
1 dash Angostura Bitters

In a cocktail pitcher stir, all ingredients, well with ice. Strain into cocktail glass. Squeeze orange peel over top.

Bald Head Martini


There was some curiosity about when we decided to try this martini however I do not know why this cocktail is called the Bald Head. Similar to a classic martini that is crisp, it has an invigorating sip. 

Bald Head Martini

makes 2 martini

1 oz French Vermouth
1 oz Italian Vermouth
4 oz Gin
1 to 2 dashes of Absinthe

Place all ingredients into a cocktail pitcher with ice cubes. Strain into martini glass. Twist lemon peel over the drink, if you wish or decorate with a stuffed olive.

Liberté Cocktail


A liberating cocktail that is crisp and refreshing. Worthy of any celebratory toast!

makes 1 cocktail

3 oz Lillet Blanc
1 oz Tanqueray No.10
2 dashes Regan's Orange Bitters
ice cubes
orange peel, for garnish

In a cocktail pitcher stir ingredients together with ice cubes and strain into a cocktail glass. Twist and garnish with orange peel, if you wish.

Unusual Negroni


This isn't so unusual if you enjoy a smooth mellow cocktail. A nice alternative to the drier classic. 

Unusual Negroni

makes 1 cocktail

1 oz Aperol
1 oz Lillet
1 1/4 oz Gin
ice cubes
small grapefruit slice or grapefruit twist for garnish, if you wish

To serve on the rocks: Pour the Aperol, Lillet and Gin onto and Old Fashion glass with ice cubes. Stir. Garnish with a grapefruit slice or twist, if you wish.

To serve as a cocktail: Pour the Aperol, Lillet and Gin into a mixing pitcher with ice. Strain into chilled cocktail glass and garnish with a grapefruit twist, if you wish. 

Notes: try botanical gins for a slightly different flavour.

Vesper Cocktail


This James Bond inspired cocktail, is named after the character in the movie Casino Royale, Vesper Lynd. It is a light citrus cocktail that is crisp and complex.  

Vesper Cocktail

makes 1 cocktail

3 oz London dry gin
1 oz vodka
1/2 oz Lillet or Cocchi Aperitivo Americano  
lemon zest for garnish


Place all the ingredients into a cocktail pitcher with ice. Stir well until chilled, for about 20 seconds, strain into chilled cocktail glass or place all the ingredients into a cocktail shaker and shake for about 10 seconds, this will make the cocktail more bubbly and cloudy. Squeeze the lemon zest over the drink and use as a garnish, if you wish.

Aperol Gin Cocktail


This cocktail will surely beat the summer heat. Summery like a Pimms and with a slight bitter twist that is refreshing.  


Aperol Gin Cocktail

makes 2 cocktails

2 slices of cucumber
6 oz of gin
2 oz Aperol
2 oz lime juice
2 oz simple syrup
splash of club soda
lime for garnish, if you wish


Muddle the cucumber in the bottom of a cocktail shaker. Add Aperol, gin, lime juice, and simple syrup. Shake vigorously to combine. Strain into 2 cocktail glasses filled with ice.
Top each glass with a splash of club soda, garnish with a lime slice, if you wish.

Gin and Dubonnet



Apparently, this pre-dinner digestif is a favourite of Queen Elizabeth's and if those sources are right, I can understand why. It's light and refreshing. A fruity drink with a slight bitter edge. 


Gin and Dubonnet

3 ice cubes
1 oz gin, preferably Gordons
2 oz Dubonnet (fortified red wine) 
slice of lemon 

Place the ice cubes in a low tumbler cocktail glass. Add the gin and Dubonnet . Stir and add a lemon slice, if you wish.

Milanese Spritz


I stumbled upon this cocktail via the internet and doing more research came across a few recipes with subtle differences. Some versions add club soda, dry Vermouth or gin to customize. We decided to try the Henry C's version. It's a spritzer beverage so it's light and refreshing. Great for summer.  

Milanese Spritz

makes 1 cocktail

15ml Campari
15 ml Dry Vermouth
15 ml Gin
20 ml fresh lemon juice
20 ml Simple Syrup
Sparkling white wine, to top

Place the Campari, dry Vermouth, Gin, Lemon juice and syrup into a large wine glass. Give a gentle stir to mix together. Fill with ice and top up with the white wine. Put a lemon wedge on top, if you wish.

Attention Cocktail


This aqua coloured cocktail is one sipper of a cocktail. It is sharp with a sweet creamy violet aroma. 


Attention Cocktail

makes 1 cocktail

2 oz Gin
1/4 oz Absinthe
1/4 oz dry Vermouth
1/4 oz Créme de Violette
2 dashes Orange Bitters
Lemon peel, for garnish

Place the gin, absinthe, dry vermouth, créme de violette and orange bitters into a cocktail pitcher with ice. Strain into cocktail glass. Twist the lemon peel over the drink and place it in the glass, if you wish.
