Food Photo of the Day ~ Sunday Roast

Rather than our traditional Sunday roast sometimes I strive for something different every now and again. So this past Sunday it was oven baked seasoned chicken with brown mushrooms sautéed with truffle salt, crisp green beans and fluffy buttery mashed potatoes. Need I say more?  The sautéed mushrooms were perfect and it was great to use a wonderful gift from the pantry, the truffle salt.

Leftovers #24 ~ Meatloaf with Spinach


I do enjoy eating my spinach raw however I also keep some of those frozen blocks of  chopped spinach on hand. They are ready to use and save time. It depends on what I am making and how much spinach I need; this time I had some leftovers so I decided to add the remainder to the meatloaf I made for dinner on Sunday, as part of our Sunday roast meal. It was a very welcoming change that added a bit of colour to this ordinary classic dish while adding some vitamins and minerals. You can tell from the photo that the food was straight out of the oven, off the stove and on to the plate as there appears to be a foggy steamy haze lurking about. Perhaps it is the steam of meatloaf's past.

Nice golden brown top, moist and an excellent way to add more veggies and nutrients to a meal.

Food Photo of the Day ~ Loaded Oat Bran

Sunday brunch was a bit more casual this weekend. Cooked oat bran with all sorts of lovely toppings to add some crunch, sweetness, fibre and nutrition. Chopped dried apricots, crushed almonds, unsweetened shredded coconut, flax seeds and sunflower seeds. The kidlets had fun picking and choosing which to add. I also added a drizzle of maple syrup and just a touch of milk, to mine. Oat bran loaded like this made more of a delicious balanced cereal, rather than dumping sugar on it trying to get some flavour. There are many ways to dress up an otherwise bland breakfast cereal by adding ingredients like these. Simple, healthy and a great way to start the day!

Sunday Morning!


With the constant snow that has been falling over the past 24 hours I felt I wanted a semi hearty breakfast with a healthy twist. So Sunday morning breakfast was French toast with apples slices, vanilla yoghurt, sprinkled with cinnamon sugar. Very satisfying as the snow continually fell outside.
