Food Photo of the Day ~ Sunday Roast

After such a lovely weekend, it was quite rewarding to cook up a classic Sunday roast for the masses. Roast beef, Yorkshire puds, oven roasted potatoes and carrots, lashing of gravy and a spot of sun dried tomato and smoked chilli chutney on the side. A nice comforting way to ward off the rainy day and cozy up into the evening.

Hope everyone had a fabulous weekend! - JD

My Week In Food

This week was a particular busy one and I ended the weekend off or started the week, depends on how you look at it, with a roast beef dinner. Baby potatoes, carrots and mushy peas with lashings of gravy.

Herb encrusted and done to perfection. Oven roasted at 325ºF for... depends on the size of the roast. The roast I had was just about 4 pounds in weight therefore it cooked for about 3 and 1/2 hours.

Christmas baking got off to an earlier start. These chai shortbread were aromatically sound and delicious. Even more delicious with a cup of tea or coffee.

Oh Christmas trees, Oh Christmas trees... my daughter had fun decorating these.

Snack time! Found some exotic snacks at No Frill's. Masala Chana (Crispy Spicy Chickpea), Chatpata Dal (Hot and Sour treat of Gram) and Spicy Peanuts. Very spicy however very tasty and full of flavour.

A comforting substantial dinner and a favourite of mine, pasta to keep one going during such a busy week. I made quite a bit so there are leftovers for tonights dinner.

And at the end of it all... Camp coffee with Chestnut flavouring, steamed milk and a dash of cinnamon sugar. My cup does warmth over.

Being pulled in many directions can be enlightening! Hope everyone has had a good week. - JW

Sunday Roast

Over the weekend I was still trying to recoup from this horrible throat infection so that virtually left me nonexistent in the kitchen. My husband made Sunday nights dinner. Through the pots clanging and pepper grinding I really wanted to do nothing more than to manoeuvre around the kitchen at top speed. However I had to rest. He did quite a lovely job at Sunday roast. Roast beef with rosemary and horseradish, roasted potatoes, steamed carrots and mushy peas. Unfortunately I could not enjoy any savoury morsel. After managing only liquids for 6 days I did try a few steamed carrots, mashed, and had a few bites of mushy peas. Tasty as they were I could not enjoy them to their fullest. Everyone not only relished in Sunday roast but complimented the chef. The big compliment coming from me, of course!

I am starting to feel better. Saw the doctor yesterday and I have many doses of penicillin to get me back on track. I think by Thursday I will be up and running full steam ahead in the kitchen. I hope you all had a good weekend!  - JW

Sunday Roast on Thursday

I decided to cook a roast, the first in two years. I used the slow cooker although my first instinct was to turn on the oven. I used a bit of red wine, some olive oil, a whole bunch of mixed herbs and some cloves of garlic. Set the slow cooker to low and cooked it for about 5 hours.

When the roast was done this was how it sliced. Growing up we always had Sunday roast. It wasn't Sunday unless the oven was cooking up a roast. Mash potatoes, peas, corn and always a slice of bread with butter accompanied the roast. I was more of a meat eater back then in part due to my heritage. Although I like to maintain those traditions I do like to make more well balanced choices.

Just seeing this photo sends me into vegetable heaven! There is nothing more comforting than oven roasted veggies. This is super easy to make. I quartered potatoes, carrots and onions and added a handful of peeled cloves of garlic in a large bowl. I then added some olive oil, pinch of salt, some pepper, some herbs, balsamic vinegar and tossed to coat. Put them on a baking try lined with parchment paper. I popped the tray into the oven for about 40 minutes on 400ºF. Checking every now and again and flipping if needed.

This was my plate. A kale salad, roasted veggies, mushy peas and to the right is a tiny piece of meat. It's quite laughable the size, I suppose. Meat isn't my first choice, especially red meat. In fact, veggie options are what I gravitate to the most. Look at the size of the salad on my plate! However some family and friends eat meat. I accept that. Therefore I accommodate. Enjoy your weekend! - JW
