Food Photo of the Day ~ Korean Bibimbap

My son created this dinner for us, it's one of his favourite meals, Korean Bibimbap and it was so delicious. I have enjoyed Bibimbap many times however his efforts were extremely tasty. It was nice of him to make dinner for us. I was able to have the evening off, so to speak, from the kitchen and relax although I did offer a helping hand to keep the kitchen running smoothly.

Have a good weekend everyone and stay safe! - JD

My Big Greek Salad

I know it is Thursday and I can hardly say this is a throwback Thursday because I always eat salads. This was my dinner last night, my version of a greek salad. Mixed herbed greens with chunks of cucumber, red onion, crisp green peppers, slices of radishes and quartered juicy hothouse tomatoes. Topped with fried Halloumi cheese and a homemade herb dressing. I chopped a reasonable amount of veggies which means there are leftovers for lunch today.  I do have some avocados kicking around so I will have my salad with additional slices of buttery avocados.  Hope your Thursday isn't too much of a throwback! - JW

What Is In The Garden...

A pleasant surprise in the garden as the chocolate mint, I planted last year, came back very strong. I can not wait to pick and dry the leaves for some cooking and baking over the winter months. I honestly didn't think it would survive the winter.

The radishes are a little slow this year. I think in most part due to the rhubarb. It seems to be taking over most of the garden space. You can tell by the big green leaf in the right hand corner. The rhubarb is massive and is ready to photobomb any chance it can get.

We started the yellow beans in planters. They have sprung up quite quickly. My daughter was excited to see her effort come to fruition. They certainly enjoy the early morning sunshine.

I know peonies are not edible however I just had to share this photo. As always they are blooming beautifully. The ants are furiously attacking the buds for their sweet nectar.

Hope everyone has a fabulous weekend! And to all my Canadian followers Happy Canada Day! - JW

Goats Cheese on Pumpernickel

Those brick like loaves of pumpernickel always fascinated me when I was a little girl. How did they condense all that bread into those thin slices? How does it toasts? Is this bread just for such gatherings where only fine finger food and champagne are served? Or is it more of an afternoon tea bread? I felt very compelled to buy such said loaf when I was browsing the aisles of the German Deli.

I made a round of these tasty morsels to share for lunch. Goats cheese on thin pumpernickel slices, cut in half and then cut in half again to make a square shape. Then I spread some champagne dill mustard on top of the cheese, added a radish, cucumber or tomato and then sprinkled summer savoury over all the prepared slices. I served them with a pot of Earl Grey tea. There are many options for dressing these pumpernickel slices. The possibilities are endless and you can get the kids involved. They will have loads of fun adding their favourite toppings. Enjoy your weekend! - JW

My Garden

We have a garden. Not a lot is planted there, three different types of tomato plants, one rhubarb and two rows of radishes. It was planted late about midsummer and trying to be diligent did seem cumbersome. Except for the rhubarb, which stalks pointed every which way, the tomatoes and radishes seemed a bit shy. Yesterday we checked on our little garden and this is what we found...

Three very lovely cherry tomatoes and more are on the way. I am sure these are bursting with flavour!

One radish that went straight into the salad I was making for dinner last night.

Two very green tomatoes which can be ripen by placing them on a window sill which gets loads of sun.

Next year I would like to plant earlier and extend the garden so other vegetables may be planted. Regardless of it being planted late we still managed to reap some positive benefits from the garden. The tomato plants are still going strong. The radishes could still produce a few more. As for the rhubarb... it's still wild as ever. How does your garden grow? -JW
