Pita Chips


Having leftover pita is a rare occurrence. Let me rephrase that having leftover slightly stale pita happens from time to time and what to do with said pita. Make pita chips of course! These are very simple and easy to make.

Turn the oven on to 350ºF and line a baking sheet with parchment paper.

Using a sharp serrated knife cut the pitas into shapes, triangles, strips, squares or random pieces. Place those pieces into a large bowl. Toss with oil, I used olive oil, and seasoning. Make sure that the majority are coated nicely. Place the oiled seasoned pitas on the prepared baking tray, you may grate some parmesan cheese over the pieces of pita if you like, and place in the preheated oven for about 10 minutes or until slightly golden and crisp. Checking half way through the baking time. For some reason I can always tell when they are done by the smell. Perhaps I have an internal oven for such things.  


When they are done, carefully remove them from the oven. Let them rest for a few minutes. Using a lifter or spatula place on a serving plate and serve with houmous, bean dip, Tzatziki, or any dip. Enjoy!

My Week in Food



We started off the long weekend with scrambled eggs. Slices of sausages, green peppers, green onion and dashes of cumin and paprika made this a hearty breakfast. A savoury way to start the day. 


Pumpkin Pie. Next to rice pudding and bread pudding this is so comforting and smooth. This is my son's favourite therefore no holiday would be complete without it. 



Hummus with Pita. Snacking and munching. Hummus is a favourite of mine. There are so many things you can add and have with hummus, that is why it is so appealing. Just blitz some chickpeas, tahini paste, crushed garlic, lemon juice, olive oil, and a bit of water to make it all spreadable.  


I rarely and I mean rarely cook steak let alone red meat for that matter. And to be perfectly honest I wasn't quite sure on how to prepare and cook it. After much thought I decided to marinate it overnight in the following: ginger syrup, crushed garlic, honey, cumin, pepper and a pinch of salt. There were sweet hints of spiciness. Paired with Fortnum and Mason's Highgrove Spiced Fruit Chutney. Letting the contrasting flavours play with one another.

Herb and Blue Cheese Bites


I made these tasty herb and blue cheese bites the other night. They were quick and easy.

I bought a package of locally made organic whole wheat pita. Cut each one into four triangles. Set the oven to 375º. Lined a baking tray with parchment paper and placed the cut pita on the prepared baking tray. In a small bowl, I added some olive oil and some of my favourite herbs. Thyme, rosemary and garlic. Mixed the herbs and oil together. Then brushed the mixture on top of each pita piece. I then crumbled blue cheese on top. Placed the tray in the oven and baked for about 20 minutes... until the cheese had bubbled and melted. Since I was serving pasta with homemade spaghetti sauce these bites accompanied the meal nicely. They were very delicious and devoured by everyone! Have a good weekend! - JW
